Hungarian Mushroom Soup

Brrr, it’s cold!  If you love mushrooms a must try recipe is this soup with either fresh dill or substitute with fresh rosemary 

Melt 4 Tbs butter in a saucepan and add l large diced onion and 2 small flat packages of your favorite mushrooms (I used a gourmet selection) cook 10-15 minutes.  Mix in 8 Tbs flour and I Tbs paprika and 1/2 tsp Hungarian Hot Paprika (if you like it with a kick), salt and pepper to taste.   Add 3 cups chicken stock and 1 cup 2% milk, simmer 10 minutes garnish with dill or rosemary and serve with a heaping of sour cream and slice of toast caibatta bread
